Description | Pepsin belongs to a kind of proteolytic enzyme (protease) that is capable of breaking down proteins into small peptides. It is one of the three major proteases (pepsin, chymotrypsin and trypsin) contained in the human digestive system. The stomach of our body can secret pepsin to digest the protein contained in food. It is also mostly active in the acidic environment (low pH) in the stomach. It mainly cleaves the peptide bonds between hydrophobic and several aromatic amino acids including tryptophan, tyrosine and phenylalanine. Pepsin has many applications in the many fields. For example, in food industry, it can be used to modify vegetable proteins for snack items, prepare protein hydrolysates for use in flavoring food and beverages. In leather industry, it is used to remove hair and residual tissue from hides. In biopharmaceutical fields, it can be used in the preparation of F(ab’)2 fragments from antibodies. |
